Ingredients

  • 2 lbs beef stew meat or sirloin tips, cut into bite-sized chunks

  • 1 packet (1 oz) dry brown gravy mix

  • 1 packet (1 oz) dry onion soup mix

  • 1 can (10.5 oz) condensed cream of mushroom soup

  • 1 cup beef broth

  • 1 tbsp olive oil

  • 2 tbsp cornstarch (optional, for thickening)

  • 2 tbsp cold water (optional, for thickening)

  • Salt and freshly cracked black pepper, to taste

  • Fresh chives, finely chopped (for garnish)

  • Mashed potatoes or egg noodles (for serving)

Instructions

  1. Sear the beef (Optional): Heat the olive oil in a large skillet over medium-high heat. Season the beef chunks with salt and pepper, then quickly sear them for 2-3 minutes until browned on the edges. Transfer the browned beef to the bottom of your slow cooker. If you are short on time, you can skip searing and place the raw, seasoned beef directly into the slow cooker.
