Delicious Baked Southern Roadhouse Ribs With Barbecue Sauce

Ingredients

  • 2 racks of pork baby back ribs (or spare ribs)

  • 1/4 cup packed dark brown sugar

  • 1 tablespoon smoked paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon kosher salt

  • 1 teaspoon cracked black pepper

  • 1/2 teaspoon chili powder

  • 1/4 cup apple juice or apple cider vinegar

  • 1 1/2 cups thick barbecue sauce

  • Fresh chopped parsley for garnish (optional)

Instructions

  1. Preheat your oven to 275°F (135°C). Prepare the ribs by flipping them over and removing the tough, silvery membrane from the back of the racks. You can do this by sliding a butter knife under the membrane to lift a corner, then grabbing it with a paper towel and peeling it entirely off.

  2. In a small bowl, combine the brown sugar, smoked paprika, garlic powder, onion powder, salt, black pepper, and chili powder to create your sweet and savory dry rub.

  3. Massage the dry rub generously over both sides of the rib racks, pressing it firmly into the meat so it sticks well.

  4. Lay each rack of ribs on a large, separate sheet of heavy-duty aluminum foil. Bend up the edges of the foil slightly and pour half of the apple juice or vinegar into each foil packet. This liquid will steam the ribs from the inside out. Tightly seal the foil around the ribs so no moisture can escape.

  5. Place the foil packets onto a large baking sheet and bake in the preheated oven for 2.5 to 3 hours. You will know the meat is ready when it is completely tender and begins shrinking back from the ends of the bones.

  6. Remove the ribs from the oven and carefully open the foil packets, being mindful of the hot steam. Switch your oven setting to broil.

  7. Using a basting brush, slather the top of the ribs heavily with your barbecue sauce.

  8. Leave the foil open and return the ribs to the oven under the broiler for 3 to 5 minutes. Watch them very closely until the barbecue sauce becomes sticky, glossy, and beautifully charred along the edges.

  9. Let the ribs rest for about 10 minutes before slicing them between the bones. Garnish with a little fresh parsley if desired, and serve with extra napkins.
