Tender-crisp, roasted until lightly caramelized, and drenched in rich garlic butter, this side dish comes together effortlessly on a single sheet pan.
Quick Info
Prep time: 3 minutes
Cook time: 7 minutes
Yield: 4 servings
Ingredients
1 lb (450g) fresh asparagus, woody ends trimmed
2 tbsp unsalted butter, melted
1 tbsp extra virgin olive oil
3 cloves garlic, finely minced
1/2 tsp sea salt
1/4 tsp freshly cracked black pepper
1 tbsp fresh parsley, finely chopped
1/2 fresh lemon, cut into wedges (for serving)
Optional: 2 tbsp finely grated Parmesan cheese
Instructions
Prep the oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil for easy cleanup.
Trim the asparagus: Snap or slice off the tough, woody bottom ends of the spears (about 1 to 1.5 inches). Pat the spears completely dry with a clean kitchen towel so they roast rather than steam.
Season: Place the asparagus directly onto the baking sheet. Drizzle with melted butter and olive oil, then scatter the minced garlic, salt, and black pepper evenly over the top. Toss with your hands until every spear is well coated, then spread them into a single, flat layer.
Roast: Bake for 7 to 9 minutes, depending on spear thickness, until the asparagus is bright green, fork-tender, and the tips are lightly crisped.
Finish and serve: Transfer to a serving dish, sprinkle immediately with freshly chopped parsley (and Parmesan, if using), and finish with a quick squeeze of fresh lemon juice.
