Ingredients
1 lb (450g) skinless salmon fillets, cut into 1-inch cubes
1 tbsp cornstarch
1 tbsp neutral cooking oil (avocado or canola)
Pinch of salt and black pepper
Glaze:
3 tbsp low-sodium soy sauce
2 tbsp honey (or brown sugar)
1 tbsp mirin or rice vinegar
1 clove garlic, grated
½ tsp fresh ginger, grated
1 tsp toasted sesame oil
Bowl Assembly:
2 cups warm steamed jasmine or sushi rice
1 scallion, thinly sliced
1 tsp toasted sesame seeds

Instructions
Pat the salmon cubes thoroughly dry with paper towels to ensure a crisp crust. Toss them gently in a bowl with cornstarch, salt, and pepper until lightly coated.
Whisk together the soy sauce, honey, mirin, grated garlic, grated ginger, and sesame oil in a small bowl; set aside.
Heat the cooking oil in a large nonstick or cast-iron skillet over medium-high heat until shimmering.
Add the salmon cubes in a single layer, leaving space between each piece so they sear rather than steam. Cook undisturbed for about 2 minutes until the bottoms are golden and crisp, then flip and sear for another 1 to 2 minutes.
