2 large boneless, skinless chicken breasts, halved horizontally to make 4 thin cutlets
1 cup buttermilk
1 large egg
1 tsp hot sauce (optional, for depth)

2 tbsp cornstarch
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1 tsp salt
1/2 tsp freshly cracked black pepper

Instructions
1. Prep the Meat
Place the cutlets between two sheets of plastic wrap. Gently pound them with a meat mallet to an even 1/2-inch thickness. Pat dry with paper towels.
2. Set Up the Breading Station
In a shallow bowl, whisk together the buttermilk, egg, and hot sauce.
In a second wide dish, whisk together the flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper. Drizzle 2 tablespoons of the buttermilk mixture into the dry flour and rub it together with your fingers to create small shaggy bits—these create extra-craggy crunch.
3. Dredge the Cutlets
Dredge each piece of chicken in the seasoned flour, shake off excess, dip thoroughly into the buttermilk wash, and then press firmly back into the seasoned flour to coat completely. Transfer to a wire rack and rest for 10 minutes so the breading adheres.

Simmer for 3 to 5 minutes until thickened, then season with the cracked black pepper and salt.
