    • 1 tbsp coconut oil (or neutral cooking oil)

    • 1 small yellow onion, finely diced

    • 3 cloves garlic, minced

    • 1 tbsp fresh ginger, finely grated

    • 2 tbsp red Thai curry paste (or mild yellow curry powder)

  • Sauce & Simmer

    • 1 can (14 oz / 400ml) full-fat coconut milk

    • 1 cup low-sodium chicken broth

    • 1 tbsp soy sauce or tamari

    • 1 tbsp brown sugar or honey

    • 1 tbsp fresh lime juice

  • To Serve & Garnish

    • 3 cups cooked jasmine rice, warm

    • 1 fresh lime, cut into wedges

    • 1/4 cup fresh cilantro leaves, roughly chopped

    • 1 tsp crushed red chili flakes (adjust to taste)

Instructions

  1. Sauté the aromatics: Heat the coconut oil in a large deep skillet or Dutch oven over medium heat. Add the diced onion and cook for 3–4 minutes until soft and translucent. Stir in the minced garlic, fresh ginger, and curry paste. Cook for about 60 seconds until fragrant, stirring constantly so the paste doesn't burn.

  2. Simmer the chicken: Pour in the coconut milk, chicken broth, soy sauce, and brown sugar, whisking gently to combine with the paste. Nestle the raw chicken breasts directly into the liquid. Bring the sauce to a gentle boil, then lower the heat to a low simmer. Cover with a lid and let cook for 12–15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
