Crispy Cheese Sticks: Simple Homemade Appetizer With Warm Tomato Sauce

This simple homemade appetizer pairs seasoned, golden breadcrumbs with creamy mozzarella, served alongside rich, warm tomato sauce for dipping.

Ingredients

For the Cheese Sticks:

  • 12 whole-milk mozzarella string cheese sticks (or a 16-ounce block cut into 1/2-inch sticks)

  • 1/2 cup all-purpose flour

  • 2 large eggs

  • 2 tablespoons milk

  • 1 1/2 cups Italian-seasoned panko or regular breadcrumbs

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/4 teaspoon kosher salt

  • Neutral oil (vegetable or canola), for frying

For the Warm Tomato Sauce:

  • 1 cup marinara or crushed tomato sauce

  • 1 clove garlic, minced

  • 1 tablespoon olive oil

  • 1/4 teaspoon dried oregano

  • Pinch of crushed red pepper flakes (optional)

  • Salt and black pepper to taste

Instructions

1. Prep the Breaded Sticks

  • Cut each cheese stick in half crosswise to create 24 bite-sized pieces.

  • Set up a dredging station with three shallow bowls:

    • Bowl 1: Flour.

    • Bowl 2: Eggs and milk whisked together until smooth.

    • Bowl 3: Breadcrumbs combined with garlic powder, onion powder, and salt.

  • Dredge a piece of cheese in the flour, shaking off excess.

  • Dip thoroughly into the egg mixture, then roll in the seasoned breadcrumbs to coat.

  • Double-coat: Dip the stick back into the egg wash and roll in breadcrumbs a second time. This double layer prevents cheese from bursting out during cooking.

  • Place the coated sticks on a parchment-lined baking sheet.

2. Freeze (Crucial Step)

  • Place the baking sheet into the freezer for at least 60 to 90 minutes until the breaded sticks are completely solid. Skipping this will cause the cheese to melt and leak before the outer shell turns crisp.

3. Simmer the Dip

  • While the cheese chills, heat olive oil in a small saucepan over medium-low heat.

  • Sauté minced garlic until fragrant (about 30 seconds).

  • Stir in the tomato sauce, dried oregano, red pepper flakes, salt, and pepper.

  • Simmer gently on low heat for 10 minutes, stirring occasionally, then keep warm until serving.

4. Fry to Golden Perfection

  • Pour 2 to 3 inches of oil into a deep, heavy-bottomed pot or skillet. Heat to 365°F (185°C).

  • Working in batches of 4 to 5 sticks directly from the freezer, fry for 60 to 90 seconds until the exterior is deeply golden and crisp.

  • Remove with a slotted spoon or spider strainer and transfer to a wire rack or paper-towel-lined plate.

  • Allow to rest for 1 to 2 minutes before serving so the interior settles into an ideal gooey consistency.

Serving

Serve immediately while hot and crunchy with the warm tomato sauce on the side for dipping.
