Instructions

  1. Whisk the marinade: In a medium bowl, combine the olive oil, lime juice, lime zest, honey, soy sauce, minced garlic, chili powder, red pepper flakes, cumin, smoked paprika, salt, and black pepper. Whisk vigorously until the honey fully dissolves.

  2. Reserve a portion: Pour 1/4 cup of the marinade into a small clean glass bowl and set it aside in the fridge. You will use this uncontaminated mixture as a basting glaze and dipping sauce later.
