4 medium russet or Yukon Gold potatoes, peeled and cut into 1/2-inch cubes

1 tsp paprika
1/2 tsp onion powder
1/2 tsp dried thyme or oregano
1 tsp salt, divided (adjust to taste)
1/2 tsp freshly cracked black pepper
1 tbsp olive oil or butter
1/2 cup beef broth
2 cups sharp cheddar cheese, freshly shredded

Instructions
