No-Bake Cheesecake Fruit Salad

Prep time: 15 minutes

Servings: 8-10

Ingredients

  • 8 oz cream cheese, softened to room temperature

  • 1/2 cup powdered sugar

  • 1 tsp pure vanilla extract

  • 8 oz heavy whipping cream (or frozen whipped topping, thawed)

  • 1 lb fresh strawberries, hulled and sliced

  • 2 cups seedless green grapes

  • 2 cups fresh pineapple, diced

  • 1/3 cup caramel sauce

  • 1/4 cup graham cracker crumbs (optional topping)

Instructions

  1. Make the Cheesecake Base: In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until completely smooth and fluffy.

  2. Fold in the Whipped Cream: In a separate bowl, whip the heavy cream to stiff peaks (or use pre-made whipped topping). Gently fold the whipped cream into the cream cheese mixture using a rubber spatula until fully combined.

  3. Prep and Combine Fruit: Wash and thoroughly dry all the fresh fruit. Gently fold the sliced strawberries, green grapes, and diced pineapple into the cheesecake mixture until evenly coated.

  4. Chill: Cover the bowl tightly with plastic wrap and chill in the refrigerator for at least 30 minutes before serving.

  5. Garnish and Serve: Just before serving, drizzle the caramel sauce generously over the top and sprinkle with graham cracker crumbs for an extra cheesecake crunch. Serve cold.

Chef's Tip: Make sure your fruit is completely dry before folding it into the cream mixture to keep the dressing thick and rich!
