Sweet & Spicy Chipotle Honey Salmon Bowls (Easy Meal Prep)

Chipotle Honey Glaze

  • 3 tbsp honey

  • 1 tbsp chipotle paste (or minced chipotles in adobo sauce)

  • 1 tbsp soy sauce (or tamari)

  • 1 tbsp fresh lime juice

  • 2 garlic cloves, minced

  • ½ tsp smoked paprika

  • Pinch of salt

Salmon & Bowl Base

  • 4 skin-on or skinless salmon fillets (6 oz each)

  • 1 tbsp olive oil

  • Salt and black pepper to taste

  • 3 cups cooked white jasmine or basmati rice

  • 1 cup sweet corn (canned, frozen, or freshly charred)

  • 1 cup cooked black beans, rinsed and drained

  • 1 cup finely shredded green cabbage

  • 1 large ripe avocado, sliced

  • ½ cup quick-pickled red onions

  • 1 lime, cut into wedges

  • Fresh cilantro, chopped for garnish

  • Sesame seeds for garnish

  • Lime crema or sour cream for drizzling

Instructions

  1. Prep the Glaze: Whisk together the honey, chipotle paste, soy sauce, lime juice, garlic, smoked paprika, and a pinch of salt in a small bowl until smooth. Set half of the mixture aside for drizzling later.

  2. Season & Sear: Pat the salmon fillets completely dry with paper towels. Season lightly with salt and pepper. Heat olive oil in a skillet over medium-high heat. Place salmon skin-side down (if using skin-on) and cook for 3 to 4 minutes until golden.

  3. Glaze & Caramelize: Flip the salmon and brush generously with the remaining glaze. Cook for another 3 to 4 minutes until cooked through and glossy with sticky edges. Alternatively, pop the skillet under a broiler on high for 2 minutes to get extra char.

  4. Assemble the Bowls: Divide the warm rice evenly among four deep bowls. Arrange shredded cabbage, sweet corn, black beans, avocado slices, and pickled red onions in neat sections around the rice.

  5. Finish & Serve: Nestled a cooked glazed salmon fillet right in the middle of each bowl. Drizzle with reserved glaze and lime crema, then top with chopped cilantro, sesame seeds, and a fresh lime wedge. Serve warm!

To meal prep, assemble the rice, corn, beans, and cabbage in airtight containers. Keep the salmon, avocado, and fresh sauces stored separately, then warm the base and top with salmon just before serving.
