Ingredients

For the Chicken:

  • 2 large boneless, skinless chicken breasts (halved horizontally into 4 thin cutlets)

  • 1/2 tsp onion powder

  • 1/4 tsp freshly cracked black pepper

For the Creamy Dill Ranch & Toppings:

  • 1/3 cup Greek yogurt or mayonnaise

  • 2 tbsp buttermilk or sour cream

  • 1 tbsp finely chopped fresh dill

  • 1 tsp fresh lemon juice

  • 1/4 tsp garlic powder

  • Salt and black pepper to taste

  • Sliced dill pickle chips (for garnish)

  • Fresh dill sprigs, chopped (for garnish)

Instructions

  • Marinate the Chicken: Place the chicken cutlets in a shallow dish or zip-top bag and pour the pickle juice over them. Let sit at room temperature for 15 to 20 minutes (or refrigerate up to 2 hours if prepping ahead).

  • Set Up the Breading Station: In a shallow bowl, whisk the egg. In a second shallow bowl, combine the panko breadcrumbs, garlic powder, onion powder, paprika, kosher salt, and black pepper.
