1 can (20 oz) crushed pineapple or pineapple tidbits, well drained (reserve 2 tbsp juice)
1 box (3.4 oz) instant vanilla or coconut cream pudding mix
1 tub (8 oz) whipped topping (such as Cool Whip), thawed
1 ½ cups miniature marshmallows
1 cup sweetened shredded coconut (plus 2 tbsp lightly toasted for garnish)
1 can (11 oz) mandarin oranges, drained (optional)
Maraschino cherries, for topping
Instructions
Whisk the Base: In a large mixing bowl, combine the drained pineapple, 2 tablespoons of reserved pineapple juice, and dry instant pudding mix. Stir thoroughly until the pudding powder dissolves and thickens.
Fold the Fluff: Gently fold in the thawed whipped topping using a rubber spatula until the mixture is uniform and smooth.
