Ingredients
The Salmon & Sides:
2 center-cut salmon fillets (approx. 6 oz each, skin-on)
1 tbsp olive oil
1 tbsp unsalted butter
1/2 tsp kosher salt
1/4 tsp cracked black pepper
1 lb baby yellow potatoes, halved and roasted
1 bunch fresh asparagus, trimmed and roasted or sautéed
The Rich Dill Sauce:
1 tbsp unsalted butter
2 cloves garlic, finely minced
1/3 cup low-sodium vegetable or chicken broth
3/4 cup heavy cream
1 tbsp fresh lemon juice
2 tbsp fresh dill, finely chopped (plus extra sprigs for garnish)
Salt and cracked black pepper to taste
1 fresh lemon, thinly sliced
Preparation Steps
Prep the fish: Pat the salmon fillets completely dry with paper towels—this is the secret to a crisp crust. Season both sides generously with salt and pepper.
Sear to golden perfection: Heat olive oil and 1 tablespoon of butter in a heavy skillet over medium-high heat until hot. Place the fillets flesh-side down and cook undisturbed for 4 to 5 minutes until a deep golden crust forms. Flip carefully and cook another 3 to 4 minutes, or until the fish flakes easily. Transfer the fillets to a warm plate and set aside.
