Ingredients

2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch bite-sized pieces
1 medium yellow onion, finely diced
4 cloves garlic, minced
1 tbsp fresh ginger, grated
1 can (14 oz) plain tomato sauce or crushed tomatoes
2 tbsp tomato paste
2 tbsp garam masala
1 tbsp ground cumin
1 tsp smoked paprika
1 tsp ground turmeric
1 tsp chili powder (adjust to taste)
1 tsp salt, plus more to taste
½ tsp freshly cracked black pepper
4 tbsp unsalted butter, cubed
¾ cup heavy whipping cream (or full-fat coconut milk)
1 tbsp cornstarch mixed with 1 tbsp cold water (optional, for a thicker gravy)
Fresh cilantro, chopped (for garnish)
For the Basmati Rice:
1½ cups long-grain basmati rice
2¼ cups water
1 tbsp butter or olive oil
½ tsp salt
Instructions
1. Layer the Base
Add the diced chicken, minced onion, garlic, and ginger directly into the bottom of the slow cooker.
2. Mix the Sauce
In a medium bowl, whisk together the tomato sauce, tomato paste, garam masala, cumin, paprika, turmeric, chili powder, salt, and black pepper. Pour the sauce over the chicken, stirring briefly so every piece is coated. Scatter the cubed butter across the top.
3. Slow Cook
Cover with the lid and cook on LOW for 4 to 6 hours or on HIGH for 2.5 to 3 hours, until the chicken is fork-tender and cooked through.
4. Make the Basmati Rice
