Prep time: 15 minutes
Cook time: 15 minutes
Servings: 4
Ingredients
For the Marinated Chicken:
1.5 lbs boneless, skinless chicken breasts
2 tbsp olive oil
2 tbsp fresh lemon juice
2 cloves garlic, minced
1 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp kosher salt
1/4 tsp freshly cracked black pepper
For the Bowls:
3 cups cooked white rice (warm)
1 English cucumber, diced
1 cup cherry tomatoes, halved
1/2 cup red onion, finely diced
1/2 cup crumbled feta cheese
1/2 cup tzatziki sauce
Fresh lemon wedges and chopped fresh dill or parsley (optional, for garnish)
Instructions
1. Marinate the Chicken
In a shallow bowl or ziplock bag, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and black pepper. Add the chicken breasts, turning to coat evenly. Let marinate for at least 15 minutes at room temperature (or refrigerate for up to 4 hours).
2. Cook the Chicken
Heat a grill pan or cast-iron skillet over medium-high heat. Add the chicken and sear for 6 to 8 minutes per side, depending on thickness, until golden brown and the internal temperature reaches 165°F (74°C). Transfer to a cutting board and let rest for 5 minutes before slicing into strips.
3. Assemble the Bowls
Divide the warm cooked rice evenly among four serving bowls.
4. Arrange and Garnish
Fan the sliced chicken across the center of each bowl. Arrange the diced cucumber, halved cherry tomatoes, diced red onion, and crumbled feta around the sides. Generously drizzle the top of the chicken with tzatziki sauce. Finish with cracked black pepper and fresh herbs if desired, and serve immediately with lemon wedges.
