Ingredients
For the Chicken & Base
1.5 lbs boneless, skinless chicken breasts (or shredded rotisserie chicken)
1 tbsp olive oil or butter
1 tsp garlic powder
1 tsp smoked paprika
1/2 tsp onion powder
1/2 tsp kosher salt
1/4 tsp black pepper
3 cups cooked jasmine or long-grain white rice
For the Honey-Buffalo Glaze
1/2 cup buffalo hot sauce (such as Frank's RedHot)
1/3 cup honey (or hot honey for extra kick)
2 tbsp unsalted butter, melted
1 tsp apple cider vinegar
1/2 tsp Worcestershire sauce
For the Toppings
3 green onions (scallions), thinly sliced
Red pepper flakes (optional)
Ranch or blue cheese drizzle (optional)
Instructions
Cook and shred the chicken: If using raw breasts, season both sides with salt, pepper, garlic powder, and paprika. Heat olive oil in a skillet over medium-high heat. Cook for 6–7 minutes per side until the internal temperature reaches 165°F (74°C). Transfer to a cutting board and shred using two forks.
Whisk the glaze: In a small bowl, whisk together the buffalo sauce, honey, melted butter, apple cider vinegar, and Worcestershire sauce until smooth and glossy.
Crisp and glaze: Place the empty skillet back over medium-high heat with a pat of butter. Add the shredded chicken and cook undisturbed for 2–3 minutes so the bottom gets slightly crispy and charred. Pour about two-thirds of the glaze over the chicken, tossing quickly until the sauce thickens and coats the meat in a sticky glaze (about 1–2 minutes). Remove from heat.
Assemble the bowls: Divide the warm, fluffy white rice evenly among four bowls. Heap a generous portion of the glazed chicken right in the center.
Garnish and serve: Spoon the remaining glaze over the top, then shower each bowl with sliced green onions and a pinch of red pepper flakes. Serve immediately while hot.
