Indulge in a rich, authentic coconut chicken curry featuring tender chicken simmered in a velvety, aromatically spiced tomato sauce. Easy to make and deeply comforting, this classic Indian meal pairs perfectly with warm naan and basmati rice for weeknight dinners.
Quick & Traditional Coconut Chicken Curry
There is something undeniably comforting about a piping hot bowl of coconut chicken curry. The magic of this dish lies in the balance of bright, pungent spices softened by the silky richness of coconut milk and a swirl of fresh cream. It is the kind of recipe that makes your kitchen smell incredible within minutes, pulling everyone to the dinner table before you even finish garnishing with fresh cilantro.
While traditional curries often require hours of slow-simmering to build depth, this streamlined version delivers that slow-cooked, complex flavor profile in a fraction of the time. Boneless chicken thighs remain tender and juicy as they bath in a deep red tomato and spice base. Served alongside warm, pillowy naan bread for scooping, it brings the ultimate restaurant-quality experience right to your home.
Prep Time: 15 minutes
Cook Time: 25 minutes
Servings: 4
Ingredients
1.5 lbs boneless, skinless chicken thighs (cut into bite-sized pieces)
1 tbsp neutral cooking oil or ghee
1 medium yellow onion, finely diced
4 cloves garlic, minced
1 tbsp fresh ginger, grated
1 tbsp garam masala
1 tsp ground turmeric
1 tsp ground cumin
1 tsp ground coriander
1 tsp smoked paprika or Kashmiri chili powder (adjust for heat)
1 cup canned tomato puree or crushed tomatoes
1 cup full-fat canned coconut milk
1/2 cup heavy cream (plus extra for swirling)
1 tsp salt (or to taste)
Fresh cilantro, coarsely chopped (for garnish)
Warm naan bread and basmati rice (for serving)
Instructions
Sear the Chicken: Heat the oil or ghee in a large skillet or heavy-bottomed pot over medium-high heat. Add the chicken pieces and sear until lightly browned on all sides, about 4–5 minutes. Remove the chicken from the pan and set aside on a plate (it will finish cooking in the sauce).
Build the Aromatics: Lower the heat to medium. Add the diced onion to the same skillet and cook until soft and translucent, about 4 minutes. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
Toast the Spices: Add the garam masala, turmeric, cumin, coriander, and paprika. Stir constantly for about 30 seconds to bloom the spices in the warm oil without burning them.
Simmer the Curry: Pour in the tomato puree, stirring well to deglaze the bottom of the pan. Bring to a gentle simmer for 3 minutes. Stir in the full-fat coconut milk and salt until completely smooth.
Combine & Sauce: Return the chicken and any accumulated juices back into the skillet. Lower the heat, cover, and let it simmer gently for 10–12 minutes until the chicken is cooked through and tender.
Finish and Serve: Stir in the heavy cream and remove from heat. Taste and adjust salt if needed. Pour into serving bowls, finish with an extra swirl of cream, and sprinkle generously with fresh cilantro. Serve immediately alongside warm naan.
