Instructions
Beat the cream cheese base: In a large mixing bowl, beat the softened cream cheese with a hand mixer on medium speed until smooth and free of lumps (about 1–2 minutes).
Add pudding and milk: Pour in the instant pudding mix, milk, and vanilla extract. Beat on low speed until the mixture thickens and incorporates fully.
Fold in whipped topping: Use a rubber spatula to gently fold in the thawed whipped topping until the cream is light, airy, and uniform in color.
Combine the fruit: Gently fold in the sliced strawberries, green grapes, and pineapple chunks until evenly coated in the cheesecake cream.
Add the cheesecake cubes: Carefully fold in the cubed cheesecake pieces last, taking care not to crush them so they hold their shape.
