Ingredients

  • 2 tbsp unsalted butter

  • 4 cloves garlic, minced

  • 2 cups low-sodium chicken broth (or vegetable broth)

  • 1 1/4 cups whole milk (or half-and-half)

  • 8 oz uncooked penne pasta

  • 1 cup freshly grated Parmesan cheese (plus extra for serving)

  • 1/2 tsp salt (adjust to taste)

  • 1/4 tsp freshly cracked black pepper

  • 2 tbsp fresh flat-leaf parsley, chopped

Instructions

  1. Sauté the garlic: Melt the butter in a large skillet or Dutch oven over medium heat. Add the minced garlic and cook for about 1 minute until fragrant, making sure not to brown or burn it.

  2. Add liquids and pasta: Pour in the broth, milk, salt, black pepper, and uncooked penne. Stir everything together and bring the liquid to a gentle boil.

  5. Garnish and serve: Let the pasta sit for 2 minutes to thicken slightly. Top with extra shaved Parmesan, freshly ground black pepper, and chopped parsley before serving warm.
