Ingredients
Noodles: 3.5 oz (100g) thin wheat noodles (somyeon)
Sauce Base: 1.5 tbsp Korean chili paste (gochujang)
Acidity & Sweetness: 1 tbsp rice vinegar, 1 tbsp sugar, 1 tbsp honey or corn syrup
Aromatics & Seasoning: 1 tbsp soy sauce, 1 minced garlic clove, 1 tbsp Korean chili flakes (gochugaru)
Finishing Touches: 1 tbsp toasted sesame oil, 1 tbsp toasted sesame seeds
Toppings: ½ fresh cucumber (julienned), 1 soft-boiled egg
Instructions
Mix the Sauce: In a bowl, whisk together the gochujang, rice vinegar, sugar, honey, soy sauce, minced garlic, gochugaru, and sesame oil until smooth.
Boil the Noodles: Cook the somyeon in boiling water according to package instructions (usually 2 to 3 minutes).
Chill & Drain: Immediately drain the noodles and wash them thoroughly under cold running water, rubbing them gently between your hands to remove excess starch. Drain well and add a few ice cubes to ensure they are ice-cold.
Toss & Serve: Add the thoroughly drained noodles directly into the sauce bowl and mix well until evenly coated.
