  • 1 tsp baking powder

  • 1 ½ tsp garlic powder

  • 1 ½ tsp onion powder

  • 1 tsp smoked paprika

  • 1 tsp cayenne pepper (optional, for gentle heat)

  • 1 ½ tsp kosher salt

  • 1 tsp freshly cracked black pepper

  • Vegetable oil or peanut oil (for frying)

For the Country Pepper Gravy:

  • ¼ cup pan drippings (or unsalted butter)

  • ¼ cup all-purpose flour

  • 2 cups whole milk, warm

  • ½ tsp garlic powder

  • 1 tsp coarsely ground black pepper (to taste)

  • ½ tsp kosher salt

  • Fresh chopped parsley (for garnish)

Instructions

1. Prep the Chicken

  • Place the chicken cutlets between two sheets of plastic wrap and gently pound them to an even ½-inch thickness using a meat mallet or heavy skillet.

2. Set Up the Dredging Station

  • Wet bowl: Whisk together the buttermilk and egg in a shallow dish.

  • Dry bowl: Whisk the flour, cornstarch, baking powder, garlic powder, onion powder, paprika, cayenne, salt, and black pepper in a separate shallow dish.

3. Bread the Cutlets
