Ingredients

For the Dark Chocolate Cake Layers

  • 2 cups (240g) all-purpose flour

  • 2 cups (400g) granulated sugar

  • ¾ cup (75g) Dutch-process dark cocoa powder

  • 2 tsp baking powder

  • 1½ tsp baking soda

  • 1 tsp fine sea salt

  • 2 large eggs, at room temperature

  • 1 cup (240ml) buttermilk, room temperature

  • ½ cup (120ml) vegetable or canola oil

  • 2 tsp pure vanilla extract

  • 1 tbsp finely grated fresh orange zest

  • 1 cup (240ml) freshly brewed strong hot coffee (or boiling water)

For the Orange Buttercream Frosting

  • 1½ cups (340g) unsalted butter, softened to room temperature

  • 5 to 6 cups (600–720g) powdered sugar, sifted

  • ¼ cup (60ml) fresh orange juice

  • 2 tbsp finely grated orange zest

  • 1 tsp pure vanilla extract

  • Pinch of salt

  • 1–2 drops orange food coloring (optional, for a vibrant color)

For the Dark Chocolate Ganache Drip

  • ½ cup (120ml) heavy whipping cream

  • 4 oz (115g) dark chocolate (60–70% cacao), finely chopped

  • 1 tbsp unsalted butter, room temperature

For the Garnish

  • Fresh or candied orange slices

  • Dark chocolate curls or shavings

  • Fresh orange zest

Instructions

1. Bake the Cake Layers

  1. Prep the oven and pans: Preheat your oven to 350°F (175°C). Grease three 8-inch round cake pans, line the bottoms with parchment paper, and dust the sides with cocoa powder.

  2. Combine dry ingredients: In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

  3. Add wet ingredients: Add the eggs, buttermilk, vegetable oil, vanilla extract, and orange zest. Beat on medium speed for about 2 minutes until smooth and fully combined.

  4. Stir in hot coffee: Reduce mixer speed to low and slowly stream in the hot coffee. The batter will be quite thin, which creates an extra-fudgy crumb.

  5. Bake: Divide the batter evenly among the three prepared pans. Bake for 28–32 minutes, or until a toothpick inserted into the center comes out clean.

  6. Cool: Let the cakes rest in their pans for 10 minutes, then invert them onto wire racks to cool completely. Level the cake tops with a serrated knife once cooled if needed.

2. Make the Orange Buttercream

  1. In a stand mixer fitted with the paddle attachment, beat the softened butter on medium-high speed for 4–5 minutes until light and fluffy.

  2. Gradually add the powdered sugar, one cup at a time, alternating with splashes of the fresh orange juice. Mix on low speed after each addition to prevent a sugar cloud.

  3. Add the orange zest, vanilla, pinch of salt, and food coloring (if using).

  4. Increase speed to medium-high and beat for another 3 minutes until smooth and spreadable.

3. Assemble the Cake

  1. Place the first cake layer onto your serving plate or cake board.

  2. Spread an even layer of orange buttercream (about ¾ cup) over the top.

  3. Place the second layer on top and repeat with another layer of frosting.

  4. Add the third cake layer upside down so the flat bottom becomes the top of the cake.

  5. Apply a thin layer of buttercream all around the outside and top (the crumb coat) and chill the cake in the refrigerator for 20 minutes to set.

  6. Spread the remaining buttercream evenly across the top and sides for a smooth, finished coat. Chill the frosted cake for at least 30 minutes before applying the ganache.

4. Prepare and Apply the Ganache Drip

  1. Place the chopped dark chocolate and 1 tablespoon of butter in a heatproof bowl.

  2. Heat the heavy cream in a small saucepan over medium heat until it just begins to simmer around the edges (do not boil).

  3. Pour the hot cream over the chocolate and let it sit undisturbed for 3 minutes.

  4. Whisk gently starting from the center until glossy and fully melted. Let the ganache cool for about 10–15 minutes until it thickens slightly to a pourable consistency.

  5. Use a spoon or squeeze bottle to guide drips over the top edges of the chilled cake, letting them run down the sides naturally. Pour the remaining ganache into the center of the top and smooth it gently toward the edges.

5. Garnish and Serve

  • Arrange candied orange slices, fresh zest, and chocolate curls in a crescent or crown pattern across the top while the ganache is still slightly tacky.

  • Let the cake sit at room temperature for 15–20 minutes before slicing to ensure the layers are tender and easy to cut.
