These bite-sized chicken pieces deliver the ultimate crunch on the outside while staying juicy on the inside, all tossed in a glossy, savory-sweet honey butter garlic glaze. Baking them at high heat with a light cornstarch crust gives you all the crispiness of deep-frying with far less cleanup.

Cook time: 20 minutes

Ingredients
Crispy Chicken Bites
1.5 lbs (700g) boneless, skinless chicken breasts or thighs, cut into 1-inch bite-sized pieces
2 tbsp olive oil (or neutral cooking oil)
3 tbsp cornstarch
1 tsp garlic powder
1 tsp smoked paprika
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp freshly cracked black pepper
Honey Butter Garlic Glaze
4 tbsp unsalted butter
4 cloves garlic, finely minced
1/3 cup honey
2 tbsp low-sodium soy sauce
1 tbsp apple cider vinegar (or lemon juice, to balance the sweetness)
1/2 tsp red pepper flakes (optional, for mild heat)
Garnish
1 tbsp toasted white sesame seeds
2 tbsp fresh flat-leaf parsley, finely chopped
Instructions
Preheat and Prep: Set your oven to 425°F (220°C). Line a large baking sheet with parchment paper, or place an oven-safe wire rack on top of the baking sheet and spray it lightly with cooking oil for maximum crispiness.
Season the Chicken: Pat the chicken bites dry with paper towels. Transfer them to a mixing bowl, toss with olive oil, then sprinkle in the cornstarch, garlic powder, smoked paprika, onion powder, salt, and black pepper. Toss well until every piece is evenly coated in a thin, powdery crust.
Bake: Arrange the chicken pieces in a single layer on the prepared baking sheet, leaving space between each piece so they roast rather than steam. Bake for 18–20 minutes, flipping halfway through, until golden brown, crispy, and cooked through (internal temperature of 165°F / 74°C).
Make the Glaze: While the chicken bakes, melt the butter in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant—watch carefully so it doesn't burn. Pour in the honey, soy sauce, vinegar, and red pepper flakes. Bring to a gentle simmer and cook for 2–3 minutes until the sauce slightly thickens and looks glossy.
Toss and Serve: Remove the chicken from the oven and immediately transfer the hot bites into the skillet with the glaze (or toss together in a large bowl). Coat thoroughly until every piece shines.
Finish: Plate the chicken, spooning any extra glaze from the pan over the top. Garnish generously with toasted sesame seeds and fresh chopped parsley. Serve immediately over steamed jasmine rice, noodles, or enjoy them straight off a toothpick.
