Crispy Japanese Katsu Bowls with Sweet & Savory Tonkatsu Sauce

Few meals offer the comfort of a homemade Japanese Katsu Bowl (Chicken Katsu Don). Every bite delivers a contrast of textures—juicy, tender chicken encased in a shatteringly crispy golden panko crust, resting on a bed of warm, pillowy white rice. Drizzled generously with a deeply savory tonkatsu sauce and finished with creamy Japanese mayo, it brings restaurant-quality dining straight to your kitchen.

Prep Time: 20 mins | Cook Time: 15 mins | Servings: 4

Ingredients

Chicken Katsu

  • 4 boneless, skinless chicken breasts (flattened to 1/2-inch thickness)

  • Salt and freshly ground black pepper

  • 1/2 cup all-purpose flour

  • 2 large eggs, beaten

  • 1 1/2 cups Japanese panko breadcrumbs

  • Neutral oil for frying (vegetable or canola)

Sweet & Savory Tonkatsu Sauce

  • 1/4 cup ketchup

  • 2 tbsp Worcestershire sauce

  • 1 tbsp soy sauce

  • 1 tbsp brown sugar

  • 1 tsp Mirin

  • 1/2 tsp Dijon mustard

For Serving

  • 4 cups cooked Japanese short-grain white rice

  • Japanese mayonnaise (Kewpie)

  • 2 tbsp finely chopped fresh chives or green onions

Instructions

  1. Make the Sauce: Whisk together the ketchup, Worcestershire sauce, soy sauce, brown sugar, Mirin, and Dijon mustard in a small bowl until smooth. Adjust sweetness to taste and set aside.

  2. Prep the Chicken: Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper.

  3. Set Up Dredging Station: Place flour in one shallow bowl, beaten eggs in a second, and panko breadcrumbs in a third.

  4. Bread the Cutlets: Coat each piece of chicken in flour (shake off excess), dip thoroughly into the egg mixture, then press firmly into the panko until completely coated in a thick layer of breadcrumbs.

  5. Fry to Golden Perfection: Heat 1/2 inch of oil in a skillet over medium-high heat (350°F / 175°C). Fry cutlets for 3–4 minutes per side until deeply golden brown and cooked through (internal temperature reaches 165°F / 74°C). Transfer to a wire rack to drain.

  6. Assemble the Bowls: Slice the chicken katsu into 3/4-inch strips. Fill dark ceramic bowls with warm steamed rice, place a sliced cutlet on top, and drizzle with homemade tonkatsu sauce and lines of Japanese mayo. Sprinkle with fresh chives before serving hot.
